Apple Compote
This simple, quick and delicious homemade apple compote takes less than 20 minutes to make. It’s super versatile, use it as a topping for pancakes, on yoghurt, or ice cream, as a cake filling or simply on toast with nut butter!
Ingredients
3 medium apples - peeled and chopped
1 tsp cinnamon
2 tbsp brown sugar
1 tbsp lemon juice
2 pinches sea salt
Instructions
1. Peel, core and chop the apples into small chunks (around 1.5cm).
2. In a saucepan, add the apples, cinnamon, brown sugar, lemon juice, and salt over medium heat.
3. Stirring occasionally, bring to a simmer and cook for 10-15 minutes until the apples are tender.
4. Remove from heat and set aside and allow to cool.
5. Store in the refrigerator in an airtight container for up to a week.
An idea for toast with apple compote
1. Toast a slice of bread.
2. Spread Almond butter on toast [here is a recipe for Almond & Coconut Butter].
3. Add 3 tablespoons of the Apple Compote on the toast, and sprinkle some pumpkin seeds on top.
