Red Pepper Hummus
A delicious twist on hummus, this Red Pepper Hummus also has almonds to add a slightly nutty taste. Simple, creamy & smooth!
Ingredients
1 red bell pepper
1 can chickpeas
Juice from 1 lemon
2 tablespoons of olive oil
1/4 cup almonds
1/2 teaspoon garlic powder
1/2 teaspoon paprika
4 tablespoons of cold water
Salt & pepper
Instructions
1. Char the pepper over a gas burner or under a broiler until the skin is blackened.
2. Remove from heat. Place in a bowl and cover with a towel or plastic wrap for 10 minutes.
3. Uncover and peel the skin off the pepper. Slice off the stem and remove the seeds.
4. Add the pepper, chickpeas, lemon juice, olive oil, almonds, garlic powder, paprika & water to a food processor.
5. Mix on high until smooth, adding water as needed to blend.
6. Transfer to a serving bowl and season with salt & pepper to taste.
