Baba Ghanoush

Of all the dips, Baba Ghanoush has got to be my favourite. Creamy, savoury and just the best appetiser!



Ingredients

2 medium aubergines

1/4 cup tahini

1/3 cup olive oil

1/2 teaspoon garlic powder

1/4 teaspoon paprika

1/2 teaspoon salt

Juice from 1 lemon

Salt & pepper

Instructions

1. Cut the aubergines in half lengthwise & sprinkle with salt. Leave for 5-10 minutes and pat dry with a paper towel.

2. Place aubergines in:

  • The air fryer for 20 minutes at 200°C (400°F)

  • The oven for 45 minutes at 200°C (400°F)

3. Take the aubergines out and let them cool down for 10 minutes.

4. Scoop out the cooked aubergine and put in a food processor. Add the tahini, olive oil, garlic powder, paprika, salt & lemon juice. Blend until smooth.

5. Transfer to a serving bowl and serve with pita bread or chips.
