Quinoa Breakfast Porridge
Looking for a twist on the porridge breakfast? How about using quinoa?
Cooked with creamy coconut milk, this Quinoa Porridge is a plant protein-packed, easy & creamy vegan breakfast you have to try!
Ingredients
For the Quinoa Breakfast Porridge:
1/2 cup of quinoa
1 can of coconut milk (400ml)
2 tsp honey
1/2 tsp cinnamon
For the Toppings:
1/2 cup Pomegranate seeds
1/2 cup Blueberries
2 tbsp Pumpkin seeds
2 tbsp Chocolate - chopped
2 tbsp Almonds - chopped
Instructions
1. In a saucepan, combine quinoa, milk, honey & cinnamon.
2. Bring the quinoa mixture to a boil, then reduce heat and simmer until cooked (around 12-15 minutes).
3. Divide quinoa porridge between 2 bowls.
4. Top with Pomegranate, Blueberries, Pumpkin seeds, Almonds & Chocolate.
5. Enjoy!
