Courgette & Cashew Soup

A simple & healthy creamy courgette & cashew soup with only a handful of ingredients!



Ingredients

2 tablespoons olive oil

1 onion, chopped

2 cloves garlic, chopped

4 medium courgettes, skin on, ends trimmed, halved lengthwise, and sliced

¼ cup raw cashews (3 handfuls)

1 medium or 2 small potatoes

700ml (3cups) vegetable stock

Instructions

1. Chop the onion, garlic, courgettes, and potato(es).

2. Heat the oil in a large pot over medium-high heat. Add the onion and saute for 4-5 minutes, until softened. Add the garlic, and stir for another minute.

3. Add the courgettes, potatoes, cashews and broth and bring to a boil. Turn the heat down to low, cover, and simmer for about 15 to 20 minutes.

4. Take the pot off the heat, and using an immersion blender (stick blender), blend the soup until smooth.

5. Add salt and pepper to your liking and serve.
